• 50ml/2fl oz vanilla flavoured vodka

• 25ml/1fl oz passion fruit purée

• 1 tbsp lemon juice

• 1 tbsp pink grapefruit juice

• 1 tsp vanilla sugar (made by placing an empty vanilla pod into a jar filled with granulated sugar and leaving for at least 2-3 days)

To serve

• 1 passion fruit, cut in half and sprinkled with 1 tsp vanilla sugar

• 50ml/2fl oz sparkling wine
