Almond And Raspberry Sponge With White Chocolate Ganache And Raspberry Coulis


Ingredients For the sponge
  • 50g/1¾oz ground almonds

  • 50g/1¾oz icing sugar, plus 3 tbsp extra, for dusting

  • 1 free-range egg, plus 1 free-range egg yolk

  • 40g/1½oz caster sugar

  • 3 free-range egg whites, whisked until soft peaks form when the whisk is removed

  • 40g/1½oz plain flour

  • butter, for greasing

  • 100ml/3½fl oz almond liqueur, such as amaretto

For the white chocolate ganache
  • 100g/3½oz white chocolate, broken into pieces

  • 100ml/3½fl oz double cream

  • 50g/1¾oz amaretti biscuits, crushed

  • 85g/3oz raspberries

For the raspberry coulis
  • 150ml/5½fl oz red wine

  • 2 vanilla pods

  • 1 tbsp caster sugar

  • 85g/3oz raspberries
