Smoked Pork Ballotine, Soft-shell Crab And Daikon Rolls With Apple Vanilla Sauce, Hoisin And Lime

Ingredients

Ingredients For the pork ballotine
  • 1 smoked ham hock

  • 1 bay leaf

  • 1 onion, studded with cloves

  • salt and freshly ground black pepper

  • 2 tbsp hoisin sauce

For the apple sauce
  • 1 Granny Smith apple, peeled, cored and finely chopped

  • 1 tsp caster sugar

  • 1 tsp lemon juice

  • 1 tsp water

For the daikon roll
  • 1 red pepper

  • dash of olive oil

  • 1 daikon (also known as mooli)

  • 4 leaves oak leaf lettuce

  • 1 ripe avocado, peeled, stone removed, cut into thin strips

  • 2 spring onions, finely sliced

  • small bunch enoki mushrooms

For the wasabi mayonnaise
  • 2 tbsp mayonnaise

  • 2 tsp wasabi paste

For the crab
  • vegetable oil, for deep frying

  • 2 soft-shell crabs

  • plain flour, for dredging

  • 1 free-range egg, beaten

  • 100g/3½ oz Japanese panko breadcrumbs

  • 1 lime, cut in to wedges
