Vietnamese Pork Belly Sandwich

Ingredients

  • 500g/1lb 2oz pork belly, cut into 2.5cm/1in cubes

  • 1 red chilli, chopped

  • 1 tbsp fish sauce

For the caramel
  • 2 tbsp caster sugar

For the carrot salad
  • 1 tbsp brown sugar

  • 50ml/2fl oz rice vinegar

  • dash fish sauce

  • 2 carrots, grated

For the sandwich
  • 1 baguette

  • handful chopped fresh coriander

  • mayonnaise

  • 1 tomato, sliced

  • ¼ cucumber, sliced
