Roasted Bramley Old Spot Pork Loin With Crushed Potatoes

Ingredients

Ingredients For the pork shin
  • 1 x 520g/1¼lb whole pork shin, trimmed

  • 5 carrots

  • 2 onions

  • 1 sprig fresh thyme

  • 1 bay leaf

  • 3 peppercorns

  • 1 litre/2 pints chicken stock

  • 25g/1oz Pommery mustard

  • 25g/1oz Dijon mustard

  • 1 tsp fennel seeds

  • 1 tsp ground cumin

  • 150g/5oz flour

  • 2 free-range eggs, beaten

  • breadcrumbs, for coating

  • vegetable oil, for deep-frying

For the potatoes
  • 600g/1¼lb Maris Piper potatoes, skin on

  • 80g/3oz spring onions, chopped

  • 60g/2½oz Savoy cabbage, shredded

  • 40g/1½oz bacon, chopped

  • 70g/3oz butter

  • 150ml/5fl oz milk, warmed

For the roasted Bramley Old Spot pork loin
  • 200g/7oz pork skin

  • drizzle olive oil

  • 1 x 550g/1lb 3½oz Bramley Old Spot pork loin, trimmed and sliced into four portions

  • knob butter

For the apples
  • 15g/½oz butter

  • 2 baby apples, halved, cores removed

  • 150g/5oz Granny Smith apples, peeled, cores removed, chopped

  • 25g/1oz sugar

  • 5g/¼oz cinnamon stick
