  • 500g/1lb 2oz salt cod, soaked overnight and rinsed thoroughly several times

  • 500ml/17½fl oz full-fat milk

  • 2 bay leaves

  • 400g/14oz floury potatoes (such as King Edward or Maris Piper), peeled and cut into chunks

  • freshly ground black pepper

  • 2 tbsp flatleaf parsley, roughly chopped

  • 1 tbsp olive oil

For the squid
  • 4 tbsp olive oil

  • 300g/10oz baby squid, cleaned

  • 450g/1lb cooking chorizo

  • 2 shallots, finely chopped

  • 3 tomatoes, peeled, seeds removed, cut into dice

  • salt and freshly ground black pepper

  • ½ lemon, juice only

  • 4 tbsp roughly chopped fresh basil
