Tournedos Of Fillet Steak With Marsala Sauce And Chunky Chips

Ingredients

Ingredients For the chicken liver pâté
  • knob of butter

  • 200g7oz chicken livers, cleaned

  • 1 small onion, chopped

  • 1 garlic clove, chopped

  • 1 sprig fresh thyme, leaves only

  • splash Calvados

  • splash anchovy sauce

  • salt and freshly ground black pepper

For the chunky chips
  • 4 large potatoes, such as King Edward, peeled and sliced into chunky chips

  • sunflower or vegetable oil, for deep frying

For the tournedos
  • 50g/2oz beef dripping

  • 1-2 slices wholemeal bread, cut into 4 x 10cm/4in rounds

  • knob of butter

  • 4 x 5cm/2in-thick tournedos of fillet steak

  • 1 small glass Marsala wine

  • 100ml/3½fl oz double cream

  • buttered purple spouting broccoli, to serve
