Beef Fillet With Roasted Shallots, Langoustines And Smoked Bacon Sauce

Ingredients

Ingredients For the beef
  • 600g/1lb 5oz beef fillet

  • dash olive oil

For the crisps
  • 3 large Maris Piper potatoes

  • vegetable oil, for deep-frying

  • sea salt crystals

For the sauce
  • 2 tbsp olive oil

  • 1 Spanish onion, chopped

  • 2 large carrots, trimmed and chopped

  • 450g/1lb smoked pancetta

  • 200ml/7fl oz Madeira

  • 600ml/1 pint beef stock

  • salt and freshly ground black pepper

For the roasted shallots
  • 4 banana shallots, peeled, trimmed and sliced in half lengthways through the base

  • splash olive oil

To serve
  • 1 bunch baby carrots, trimmed

  • knob of butter

  • salt, to taste

  • 4 cooked langoustines
