- 1/2 pound bacon (about 10 slices), cut into 1/2-inch pieces
- 1 small onion, finely diced
- 2 medium carrots, peeled and cut into 1/4-inch pieces
- 2 celery stalks, cut into 1/4-inch pieces
- 3 cups chicken or vegetable stock
- 2 cans (15 1/2 ounces each) white beans, drained and rinsed
- 3/4 teaspoon dried sage
- 1/2 teaspoon salt
- Pinch of ground pepper
- Cheddar Toasties:
- 4 slices sandwich bread
- 3/4 cup grated cheddar cheese
