Apricot-Jalape o Chicken


  • 12 ounces soba or somen noodles, or whole wheat spaghetti
  • Cooking spray
  • 1/2 cup sliced pickled jalapeos, drained
  • 1/2 cup apricot preserves
  • 1/4 cup chopped fresh cilantro
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 4 boneless, skinless chicken breast halves
  • 3 tablespoons reduced-sodium soy sauce
  • 2 teaspoons toasted sesame oil
  • 1/4 cup chopped scallions
  • 2 tbsp. minced pickled ginger (I could only find this at SuperTarget in the Asian aisle)
