Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups packed dark brown sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup whole-wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 3 cups rolled oats
  • 1 cup raisins (or combination of raisins and dried cranberries)
  • 1/2 cup sunflower seeds
  • 1 cup unsweetened dried coconut
  • 1 cup chopped nuts or chocolate chips, or a combination, optional (I skipped this)
