  • 8 cups low-sodium chicken broth
  • 1 ounce dried assorted mushrooms, cleaned
  • 1-1/2 tablespoons olive oil, divided
  • 1 medium onion, diced and divided
  • 2 garlic cloves, minced and divided
  • 1/2 pound button mushrooms
  • 1/2 pound baby bella mushrooms
  • 2 bay leaves
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh Italian parsley, chopped
  • 1 tablespoon butter
  • Kosher salt and freshly ground black pepper
  • 2 cups Arborio rice
  • 1/2 cup dry white wine
  • 2/3 cup fresh Parmesan cheese, grated
  • Fresh Italian parsley, for garnish (optional)
  • Truffle oil (optional)
