  • 1 medium sweet potato, peeled and grated with a box grater or the shredder plate of a food processor
  • 1 teaspoon cider vinegar
  • 1/2 teaspoon salt
  • 8 ounces boneless skinless chicken breasts (about 2 small)
  • 12 corn tortillas
  • 1/2 cup grated cheddar cheese
  • 4 green onions, thinly sliced
  • 1/2 cup cilantro, chopped
  • Sour cream
