Gingerbread and Trappist Ale Ice Cream

Ingredients

  • 2 cups heavy cream
  • 1 cup whole fat milk
  • 1 2/3 cups of Trappist ale, such as Chimay red or blue label, divided
  • 5 tablespoons molasses
  • 1-inch nub of ginger, peeled and sliced thin
  • 4 three-inch long cinnamon sticks
  • 5 whole cloves
  • 3 star anise petals
  • 4 allspice berries
  • 2 cardamom pods
  • 1/2 teaspoon freshly ground nutmeg
  • 1/2 teaspoon black peppercorns
  • 6 large egg yolks
  • 1/2 cup packed dark brown sugar
  • 1 ounce dark chocolate, finely chopped
  • 1 teaspoon vanilla extract
  • Zest of half a large lemon
  • 1 1/2 teaspoons kosher salt
  • 1/2 cup candied ginger, minced
