- 1 large egg
- 1 large egg yolk
- 2 teaspoons Dijon mustard
- 3/4 cup canola oil
- 1/2 cup extra-virgin olive oil
- Freshly ground black pepper
- 2 whole jalapeo peppers
- 2 whole serrano peppers
- 1 whole long red chile pepper
- White vinegar, for covering
- 1/4 cup plus 2 tablespoons salt
- 1 teaspoon finely ground white pepper
