Ingredients

  • 1 lemon halved, plus 2 tablespoons freshly squeezed lemon juice
  • 12 medium artichokes
  • Coarse salt
  • 1 cup plus 5 tablespoons olive oil
  • 1 tablespoon sherry vinegar
  • 1 tablespoon whole grain mustard
  • 2 colossal shrimp, peeled, deveined, and finely chopped
  • 8 thin slices Serrano ham or prosciutto, 2 1/2 by 4 inches
  • 1 recipe Pigs' Ears, cooked and julienned
