  • 1/2 cup rice vinegar
  • 1/2 English (hothouse) cucumber, peeled, quartered lengthwise, and thinly sliced
  • 1 green serrano chili, finely chopped
  • 2 Tbs. chopped roasted peanuts
  • Peanut oil or corn oil for frying
