Ingredients

  • 1 1/2 lb. boneless, skinless chicken breasts or thighs, cut into 2-inch chunks ;
  • 1/2 cup plain yogurt ;
  • 1/2 cup chopped green onions, white and light green portions ;
  • 1 large garlic clove, crushed ;
  • 1/2 cup chopped fresh cilantro ;
  • 2 Tbs. extra-virgin olive oil ;
  • 1 tsp. kosher salt, plus more, to taste ;
  • Freshly ground pepper, to taste ;
  • 1 to 2 medium zucchini, thickly sliced (optional) ;
  • 1 cup cherry tomatoes (optional) ;
