Ingredients

  • 1 clove garlic, crushed
  • 3/4 cup plus 1 Tbs. olive oil
  • Kosher salt and freshly ground pepper
  • 3 skinless, boneless chicken breast halves (about 6 oz. each)
  • 2 Tbs. minced fresh flat-leaf parsley
  • 2 tsp. minced fresh thyme
  • 4 thick slices applewood-smoked bacon, chopped
  • 1 avocado
  • 2 romaine lettuce hearts, chopped
  • 2 cups cherry tomatoes, halved
  • 1 cup crumbled Gorgonzola or other mild blue cheese
