1 teaspoon Dijon mustard
Salt and pepper, to taste

1/2 cup dried apricots, soaked for 30 minutes in 2 cups hot water (or 3 fresh apricots)
1 cup grape cherry tomatoes, halved
1/2 small red onion, thinly sliced
1/2 medium cucumber, thinly sliced
1 head romaine lettuce, torn into bite-sized pieces
5 ounces spring mix
4 ounces feta cheese, crumbled
4 slices nitrite-free bacon, cooked and crumbled(optional)
1/2 cup walnut pieces, toasted
