- 50 g butter
- 1 shallots, finely chopped

- 200 g aborio rice
- handfuls chopped fresh flat-leaf parsley, leaves only
- 20 g cornichons, finely diced
- 20 g plain flour
- 20 g Japanese panko breadcrumbs
