Beef bourguignon

Ingredients

  • 170 g un-smoked streaky bacon, rind removed and reserved, bacon cut into strips
  • 2 tbsp olive oil
  • 1.5 kg beef shin, cut into 5cm cubes (see Cook's note)
  • 1 carrot, sliced
  • 1 onion, sliced
  • 2 tbsp plain flour
  • 750 ml full bodied red wine
  • 500 ml beef stock
  • 1 tbsp tomato pure
  • 2 cloves garlic, crushed
  • 1 sprigs thyme
  • 2 bay leaves
  • 200 ml beef stock, (optional)
  • 24 small onions
  • 1 tbsp butter
  • 455 g button mushrooms
  • 1 small handful of parsley, chopped, to serve
