Ingredients

For the ginger sponge

  • 120 g butter
  • 120 g caster sugar
  • 2 eggs, lightly beaten
  • 120 g self-raising flour
  • 1 tsp ground ginger
  • 2 tbsp demerara sugar
For the ginger custard

  • 175 ml milk
  • 175 ml cream
  • 1 cm fresh ginger, grated
  • 2 egg yolks
  • 85 g caster sugar
  • 1 tsp ground ginger
  • 3 pieces preserved stem ginger, diced
