For the base

  • 3 tsp sugar
  • 1 tsp dried yeast
  • 250 g strong bread flour or '00' flour, plus extra for dusting
  • 100 g durum wheat (grano duro) semolina flour
  • 50 ml extra virgin olive oil
For the topping

  • extra virgin olive oil, for frying
  • 1 large onion, diced
  • 4 canned anchovy fillets, drained and very finely chopped
  • 175 g mozzarella, caciocavallo or provolone cheese, sliced
  • 450 ml passata, or homemade tomato sauce
  • 75 g white breadcrumbs, toasted
  • 75 g pecorino or parmesan, grated
  • 1 tbsp chopped oregano
