- 250 g strong bread flour or '00' flour, plus extra for dusting
- 100 g durum wheat (grano duro) semolina flour
- 50 ml extra virgin olive oil
- extra virgin olive oil, for frying
- 1 large onion, diced
- 4 canned anchovy fillets, drained and very finely chopped
- 175 g mozzarella, caciocavallo or provolone cheese, sliced
- 450 ml passata, or homemade tomato sauce
- 75 g white breadcrumbs, toasted
- 75 g pecorino or parmesan, grated
- 1 tbsp chopped oregano
