Brussel Sprout bubble and squeak cakes

Ingredients

For the tomatoes and onions

  • 2 onions, preferably plum, halved
  • 1 red onion, cut into wedges
  • 3 tbsp olive oil
  • 2 tsp caster sugar
  • tsp leaves thyme
For the bacon crumbs

  • 2 rashers streaky bacon
  • 50 g fresh white breadcrumbs
For the bubble and squeak cakes

  • 500 g floury potatoes, such as king edwards, peeled and quartered
  • 20 g butter
  • tsp grated nutmeg
  • 125 g brussels sprouts, finely sliced
  • 125 g cabbage, finely sliced
  • 2 tbsp olive oil
For the eggs

  • 1 splashes white wine vinegar
  • 4 eggs
