- 1 cinnamon stick
- 4 spring onions, very roughly chopped
- 2.5 cm piece of root ginger, sliced
- 100 ml Chinese rice wine, or dry sherry
- 16 Chinese pancakes
- 1 bunches spring onions, cut into fine strips
- 2 x 6 cm pieces cucumber, cut into fine strips
- 200 ml hoisin sauce
