For the pork skewers- 2 tbsp pomegranate molasses
- 80 ml water
- 1 small onion, grated
- 1 tsp ground coriander
- 1 tsp sea salt
- 1 tsp caster sugar
- 1 kg boneless pork shoulder, trimmed, cut into 4cm cubes
- 2 alfonso mango, peeled
- 2 tbsp extra virgin olive oil
- 1 tsp black mustard seeds
- 1 1/2 tbsp freshly grated root ginger
- 75 g sugar
- 1 red chilli, chopped (seeds removed if preferred)
- 1 1/2 tbsp lime juice
- 1 tbsp extra virgin olive oil
- 20 g butter
- 1 onion, finely chopped
- 2 cloves garlic, crushed
- 4 whole sweetcorn, kernels only
- 250 ml chicken stock
- sea salt and freshly ground black pepper
