  • 2 tbsp vegetable oil
  • 200 g minced beef, stir fried
  • 1 tsp finely chopped garlic
  • 1 tsp finely chopped ginger
  • 1 tsp black bean sauce
  • 1 tsp sichuanese chilli bean paste
  • tsp chilli powder
  • 200 ml chicken stock
  • 100 ml chilli oil
  • pinches chicken bouillon powder
  • sugar, to taste
  • salt, to taste
  • tsp dark soy sauce
  • 2 tsp cornflour, mixed with 1 tsp water
  • 60 g leeks, green parts only, finely shredded
  • pinches ground Sichuan peppercorns
