Ackee and saltfish with fried dumplings

Ingredients

For the ackee and saltfish

  • 300 g skinless, boneless salt cod
  • 200 ml vegetable oil
  • 2 spring onions, green ends only, chopped
  • 1 onion, roughly chopped
  • 1/2 red pepper, cored, seeds removed and finely chopped
  • 1/2 green pepper, cored, seeds removed and finely chopped
  • 1 Scotch bonnet chilli, seeds removed and chopped
  • 1 cm piece ginger, peeled and roughly chopped
  • 4 sprigs thyme, broken into small pieces
  • 1 clove garlic, chopped
  • 3 tbsp love apple tomato sauce
  • 1/2 tsp coarse ground black pepper
  • 540 g can ackee, in salted water, drained and rinsed
For the fried dumplings

  • 400 g self-raising flour
  • 1 tsp salt
  • 50 g butter, cut into cubes
  • 250 ml water
  • 400 ml vegetable oil
