For the ackee and saltfish- 300 g skinless, boneless salt cod
- 200 ml vegetable oil
- 2 spring onions, green ends only, chopped
- 1 onion, roughly chopped
- 1/2 red pepper, cored, seeds removed and finely chopped
- 1/2 green pepper, cored, seeds removed and finely chopped
- 1 Scotch bonnet chilli, seeds removed and chopped
- 1 cm piece ginger, peeled and roughly chopped
- 4 sprigs thyme, broken into small pieces
- 1 clove garlic, chopped
- 3 tbsp love apple tomato sauce
- 1/2 tsp coarse ground black pepper
- 540 g can ackee, in salted water, drained and rinsed
- 400 g self-raising flour
- 1 tsp salt
- 50 g butter, cut into cubes
- 250 ml water
- 400 ml vegetable oil
