Whisky and fudge bread and butter pudding

Ingredients

  • 200 g sultanas
  • 200 ml whiskey
  • 1 satsumas, zest only
  • 1 vanilla pod, split
  • 750 ml whipping cream
  • 750 ml milk
  • 1.5 loaves medium sliced white bread
  • 250 g butter
  • 15 egg yolks
  • 215 g caster sugar
  • freshly grated nutmeg
  • pinch ground cinnamon
For the cinnamon shortbread

  • 50 g butter
  • 110 g plain flour
  • 25 g sugar
  • 1 tsp grated lemon zest
  • 1 tsp ground cinnamon
  • 1 tbsp caster sugar
To serve

  • vanilla ice cream
  • vanilla crme anglaise
  • fruit coulis
  • seasonal mixed summer berries
