Ingredients

  • 1 ciabatta bread
  • 1-2 tbsp olive oil
For the kidneys

  • 25 g butter
  • 500 g lamb's kidneys, white central core removed
  • 70 ml marsala
  • 12 drops tabasco
  • 2 lemons, juice only
  • 1 tsp prepared English mustard
  • 150 ml double cream
For the salad

  • frise
  • 100 lardons of bacon, or diced bacon
