Ingredients

For the relish

  • 100 g white sugar
  • 50 ml white wine vinegar
  • 50 ml white wine
  • 1 large cucumber, skinned and seeded
  • 1 tsp dried red chilli flakes
For the spinach

  • 2 tbsp olive oil
  • 1 bags spinach leaves
