Ingredients

For the pesto:

  • 1/2 clove garlic
  • 1 tsp coarse sea salt
  • 1 tsp pink peppercorns
  • 25 g blanched toasted Hazelnuts
  • 2 handfuls of fresh basil and parsley, coarsely chopped
  • 3 tbsp parmesan, freshly grated
  • 3 tbsp olive oil
For the tomatoes:

  • 2 tbsp olive oil
  • 2 tomatoes, thickly sliced
  • 2 tsp balsamic vinegar
  • pinch of sugar
  • black pepper
