Twice-baked cauliflower cheese souffles with pine nut dressing

Ingredients

  • 1 small cauliflower
  • 25 g butter
  • 25 g plain flour
  • 170 ml milk
  • 60 ml double cream
  • 2 eggs, separated
  • 110 g mature cheddar cheese
  • salt, pepper and freshly ground nutmeg
  • chives, to garnish
  • mixed salad leaves, to serve
For the dressing:

  • 110 g pine kernels
  • 2 tbsp balsamic vinegar
  • 6 tbsp olive oil
  • 2 tsp caster sugar
  • black pepper
