- 1 tbsp sesame oil
- a squeeze of lemon juice
- 1 large halibut fillet, (from a 2.75kg fish)skin removed, cut into 4
- black pepper
- 4 tbsp white wine
- 2 tbsp white wine vinegar
- 2 shallots, finely chopped
- 2 sprig thyme
- 1 tbsp double cream
- 200 g unsalted butter, cut into pieces
- 1 tbsp soy sauce
