- 115 g walnuts, chopped
- grated rind of 1 oranges
- grated rind of 1 unwaxed lemons
- juice of 2 oranges
- icing sugar, (optional)
- 2 tbsp caster sugar
- 3 egg yolks
- 4 tsp brandy
- 225 g mascarpone
- 150 ml double cream
