1/2 cup dried cranberries, divided
1 bay leaf
2 cups brewed coffee, OR 2 cups water and 2-3 teaspoons instant coffee granules
2 quarts chicken stock, reduced sodium
2 tablespoons cornstarch
2 tablespoons fresh basil leaves, chopped
2 tablespoons fresh thyme leaves, chopped
2 ounces butter
1 teaspoon kosher salt
