Ingredients

  • 2 tablespoons olive oil
  • Neck and giblets (excluding liver) reserved from a 14-pound turkey
  • 2 celery ribs, sliced
  • 2 carrots, sliced
  • 1 onion, coarsely chopped
  • 2 garlic cloves, crushed
  • 4 cups water
  • 4 cups low sodium chicken broth
  • 1 bay leaf
  • 2 teaspoons whole black peppercorns
  • 3 tablespoons reserved turkey fat from roast turkey pan or unsalted butter
  • 1/4 cup all-purpose flour
  • Reserved turkey juices from roasting pan (optional)
