  • 1 7-ounce can caponata
  • 1 teaspoon salt, divided
  • Freshly ground pepper to taste
  • 1 16-ounce container low-fat cottage cheese
  • 2 6-ounce jars marinated artichoke hearts, well drained
  • 1 cup freshly grated Parmesan cheese
  • 1 8-ounce package no-boil lasagna noodles
