Ingredients

  • 1 Tbsp vegetable oil
  • 4 chicken legs (21/2 lb), skin removed, each cut into drumsticks and thighs
  • 1 medium onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 2 tsp curry power
  • 3/4 tsp salt
  • 1 can (14 oz) light coconut milk (see Tip)
  • 12 oz red-skinned potatoes, cut in 1-in. chunks
  • 51/2 cups baby spinach (from a 6-oz bag)
  • 1/3 cup basil, coarsely chopped
  • 1/3 cup cilantro leaves, coarsely chopped
