  • 4 each chicken drumsticks and thighs (about 2 1/4 lb), skin removed
  • 1 medium onion, halved and thinly sliced
  • 1 large red pepper, quartered and sliced
  • 1 can (14 1/2 oz) petite diced tomatoes with zesty jalapeños
  • 1/3 cup creamy peanut butter
  • 2 Tbsp fresh lime juice
  • 2 Tbsp soy sauce
  • 1/2 tsp ground ginger
  • 8 oz fresh snow peas
  • 1/4 cup fresh mint leaves, cut in strips
  • 1/4 cup chopped peanuts
