Tamale Pie

Ingredients

  • 2 pounds tomatillos (about 2 dozen), papery husks removed, cored and quartered
  • 1 onion, peeled and quartered
  • 1 clove garlic, crushed and peeled
  • 1 15-ounce can corn kernels, drained
  • 1 teaspoon ground cumin
  • 1 teaspoon granulated sugar
  • 1 15-ounce can black beans or pinto beans, rinsed
  • 1 tablespoon finely chopped chipotle peppers in adobo sauce or 1/4 cup prepared salsa
  • 2 tablespoons finely chopped fresh cilantro
  • 3/4 cup extra-sharp grated Cheddar cheese
  • Salt & freshly ground pepper to taste
  • 5 cups water
  • 1 1/2 teaspoons salt
  • 12/3 cups yellow cornmeal, preferably stone-ground
  • 3/4 cup extra-sharp grated Cheddar cheese
