- 1 teaspoon ground cumin
- 1 teaspoon granulated sugar
- 1 15-ounce can black beans or pinto beans, rinsed
- 1 tablespoon finely chopped chipotle peppers in adobo sauce or 1/4 cup prepared salsa
- 2 tablespoons finely chopped fresh cilantro
- 3/4 cup extra-sharp grated Cheddar cheese
- Salt & freshly ground pepper to taste
- 5 cups water
- 1 1/2 teaspoons salt
- 12/3 cups yellow cornmeal, preferably stone-ground
- 3/4 cup extra-sharp grated Cheddar cheese
