  • 2 cups arugula leaves, rinsed and dried
  • salt, to taste
  • 3 cloves garlic, peeled, or more to taste
  • 1/2 cup extra virgin olive oil, or more as desired
  • 2 tablespoons sherry vinegar or freshly squeezed lemon juice
  • 1 teaspoon hot red pepper flakes, or more to taste
