Summer Borscht

Ingredients

  • 30 oz beets canned drained whole
  • oz low sodium vegetable broth
  • 1/2 cup fat free sour cream
  • 3 tbsp vinegar red wine (or balsamic vinegar)
  • 1/2 cup fresh dill weed chopped
  • 1/4 tsp salt
  • 1/3 cup cucumber with no skin fresh sliced seeded
  • 2 oz fresh dill weed 4 sprigs (for garnish)
