Pear & Almond Custard Tart

Ingredients

  • CRUST:
  • 6 ounces almond biscotti, broken into pieces
  • 4 teaspoons sugar
  • 1/4 teaspoon salt
  • 3 tablespoons unsalted butter, melted
  • FILLING:
  • 1/3 cup whole blanched almonds
  • 1/4 cup sugar
  • 1 tablespoon flour
  • 2 large egg yolks
  • 1/2 cup milk
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon pear brandy* (optional)
  • 1 1/4 pounds firm-ripe Bosc pears, peeled, cored, and thinly sliced lengthwise
  • 2 tablespoons apple jelly
  • *a pear-flavored vodka would work too
