Ingredients

  • 1/3 cup slivered or chopped blanched almonds
  • 2/3 cup sugar, divided
  • 1 1/2 tablespoons cornstarch
  • 3 large egg whites, at room temperature
  • 1/4 teaspoon cream of tartar
  • 1/2 teaspoon vanilla extract
  • 3 ripe mangoes (3/4-1 pound each)
  • 1 tablespoon sugar
  • 1/2 teaspoon freshly grated lime zest
  • 1 teaspoon unflavored gelatin
  • 2 tablespoons lime juice
  • 1/4 cup whipping cream
  • 1/4 cup guava jelly or strained apricot preserves
