Ingredients

  • 2 tbsp.  olive oil
  • 1   large onion, chopped (1 cup)
  • 2 cloves  garlic, minced
  • 1 tsp.  ground cumin
  • 6 cups  Swanson® Chicken Broth (Regular, Natural Goodness or Certified Organic)
  • 1 can  (about 28 ounces) diced tomatoes
  • 1   canned chipotle pepper in adobo sauce*, minced
  • 7   corn tortillas (6-inch)
  • 2 cups  vegetable oil
  • 2 tbsp.  chopped fresh cilantro leaves
  • 1   avocado, peeled, pitted and cut into cubes (about 1 cup)
  • 3   medium green onions, sliced (about 1/3 cup)
  •   Lime juice
