Classic Roast Turkey With Fruit-chestnut Stuffing

Ingredients

  • 1 pound  fresh chestnuts in shell or one 10-ounce can whole peeled chestnuts, rinsed, drained, and coarsely chopped
  • 1/2 cup  chopped celery
  • 1/2 cup  chopped onion
  • 1/3 cup  butter
  • 1 cup  coarsely chopped, cored red cooking apple
  • 1/2 cup  golden raisins
  • 1 tablespoon  snipped fresh thyme or 1 teaspoon dried thyme, crushed
  • 1/2 teaspoon  salt
  • 1/4 teaspoon  freshly ground pepper
  • 8 cups  dry 1-inch sourdough bread cubes (10 ounces)
  • 3/4 to 1 cup  apple juice or chicken broth
  • 1 10- to 12-pound  turkey
  • 2 tablespoons  olive oil
  •   Salt and freshly ground pepper
