Streusel-topped Pumpkin Muffins

Ingredients

  • 1-1/2 cups  all-purpose flour
  • 3/4 cup  rolled oats
  • 2 teaspoons  baking powder
  • 1-1/2 teaspoons  finely shredded lemon peel
  • 1-1/2 teaspoons  ground cinnamon
  • 1/4 teaspoon  baking soda
  • 1/4 teaspoon  ground allspice
  • 1/8 teaspoon  salt
  • 1   beaten egg
  • 3/4 cup  milk
  • 3/4 cup  canned pumpkin
  • 1/2 cup  packed brown sugar
  • 1/4 cup  cooking oil
  • 3/4 cup  chopped dried figs or chopped pitted dates
  •   Streusel Topping (see recipe below)

Description

For These Muffins, We Took The Classic Pumpkin Bread, Added Dried Fruit, Lemon Peel, And Spices, And Sprinkled On A Crunchy Sugar Topping.
