  • 3/4 cup  chopped onion
  • 4 cloves  garlic, minced
  • 1/4 cup  butter or margarine
  • 3 tablespoons  all-purpose flour
  • 1/4 to 1/2 teaspoon  ground red pepper
  • 1/4 teaspoon  salt
  • 2 cups  half-and-half, light cream, or milk
  • 1-1/2 cups (6 ounces)  shredded American cheese
  • 2 tablespoons  snipped fresh parsley
  • 1/3 cup  grated Parmesan cheese
